When I was thinking about salad week, I thought it would be yummy to have some kind of creamy pesto dressing to top a Italian style salad. This is the recipe I came up with. I placed it on a salad that included Italian blend salad mix, diced mozzarella, canned artichoke hearts, strips of salami, olives, tomatoes, and peppers. It was delish! - 1 cup mayonnaise
- 1 1/2 cup buttermilk
- 2 Tbsp prepared pesto
- 4 cloves of garlic
- 1/4 cup grated Parmesan cheese
- In a bowl, whisk together all of the above ingredients.
- Place in the refrigerator and allow to sit for at least one hour for flavors to develop.
- Serve over salad.
