Today is my last Super Bowl recipe. This creamy cool corn dip is a really quick and easy recipe. You can add to your menu last minute. I saw a similar recipe and thought it sounded familiar. It’s like the recipe I shared for Frito Salad but in dip form. So I took the idea and created this recipe. I love it with Frito scoops, but it can be served with any corn chip. To simplify the recipe I used mexi corn. However, if you want to use regular canned corn then just add some fresh diced pepper to it.

- 3 (11 oz.) cans of mexi or fiesta corn, drained (The kind that has peppers added to it)
- 3 green onions, diced
- 1/3 cup light mayonnaise
- 1/3 cup light sour cream
- 1 Tbsp lime juice
- 1 tsp garlic salt
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1 tsp sugar
- Frito scoops or other corn chips
- Combine all ingredients together in a large bowl and refrigerate for at least 1 hour. Serve with Frito scoops.
