Creamy Cool Corn Dip

Today is my last Super Bowl recipe.  This creamy cool corn dip is a really quick and easy recipe. You can add to your menu last minute.  I saw a similar recipe and thought it sounded familiar. It’s like the recipe I shared for Frito Salad but in dip form.  So I took the idea and created this recipe.  I love it with Frito scoops, but it can be served with any corn chip.  To simplify the recipe I used mexi corn. However, if you want to use regular canned corn then just add some fresh diced pepper to it.

Creamy Cool Corn Dip

Ingredients
- 3 11 oz. cans of mexi or fiesta corn, drained (The kind that has peppers added to it)
- 3 green onions diced
- â…“ cup light mayonnaise
- â…“ cup light sour cream
- 1 Tbsp lime juice
- 1 tsp garlic salt
- ½ tsp cumin
- ½ tsp chili powder
- 1 tsp sugar
- Frito scoops or other corn chips
Instructions
- Combine all ingredients together in a large bowl and refrigerate for at least 1 hour. Â Serve with Frito scoops.
