Today is my last Super Bowl recipe.  This creamy cool corn dip is a really quick and easy recipe. You can add to your menu last minute.  I saw a similar recipe and thought it sounded familiar. It’s like the recipe I shared for Frito Salad but in dip form.  So I took the idea and created this recipe.  I love it with Frito scoops, but it can be served with any corn chip.  To simplify the recipe I used mexi corn. However, if you want to use regular canned corn then just add some fresh diced pepper to it.

Ingredients
  

  • 3 11 oz. cans of mexi or fiesta corn, drained (The kind that has peppers added to it)
  • 3 green onions diced
  • â…“ cup light mayonnaise
  • â…“ cup light sour cream
  • 1 Tbsp lime juice
  • 1 tsp garlic salt
  • ½ tsp cumin
  • ½ tsp chili powder
  • 1 tsp sugar
  • Frito scoops or other corn chips
  •  

Instructions
 

  • Combine all ingredients together in a large bowl and refrigerate for at least 1 hour.  Serve with Frito scoops.

  7. I made this on Superbowl Sunday and it was so good! I used fresh corn off the cob since I had it on hand, and I sauteed the corn with cayenne pepper, chili powder, and a clove of garlic and let it cool before proceeding with the rest of the recipe. YUM.
