When I made these roll-ups for the photos, I happened to have smaller tortillas on hand, so I used just six instead of the usual larger ones. The smaller size worked beautifully for bite-sized portions and made them perfect for snacking or serving as appetizers. If you’re using larger tortillas, you’ll get more slices per roll, so feel free to adjust based on what you have in your pantry. Turkey and Cheese Roll Ups

To assemble roll ups, mix cream cheese and cranberry sauce together in a small bowl until well blended and smooth. This creamy, tangy spread will serve as the flavorful base for each tortilla.

Lay out the tortillas and spread a thick layer of cream cheese mixture across the entire surface of each one. Next, arrange 4 slices of cheese over the cream cheese, covering as much of the tortilla as possible for even flavor in every bite.

Layer on slices of turkey, followed by a line of fresh slices of tomatoes and a leaf of lettuce placed down the middle of the tortilla. Then, starting from one side parallel to the tomato and lettuce line, roll the tortilla up tightly into a firm log shape.

Wrap each roll-up snugly in plastic wrap and refrigerate for at least 30 minutes to 1 hour. Chilling helps the roll-ups firm up, making them easier to slice and serve.

Once chilled, unwrap the wrapped rollups and slice with a sharp knife into 1-inch equal pieces. Arrange on a platter and serve immediately for a tasty, crowd-pleasing snack or side.

Can I make these roll-ups ahead of time?
Yes! You can assemble them up to 24 hours in advance. Wrap tightly in plastic and refrigerate—slice just before serving for best texture.

What kind of cranberry sauce works best?
Either canned whole berry cranberry sauce or homemade works great. If making your own, simmer fresh cranberries with sugar and water until thickened.

What type of cheese should I use?

Ingredients
  

  • 6 oz cream cheese softened
  • 3 Tbsp whole berry cranberry sauce
  • 3 flour tortillas burrito sized
  • ¼ pound sliced deli turkey about 6 large slices
  • 12 slices Swiss cheese
  • 3 romaine leaves
  • 2 tomatoes thinly sliced

Instructions
 

  • In a bowl, combine the cream cheese and cranberry suce until well combined.
  • Spread the cream cheese mixture evenly onto each tortilla.
  • Place 4 slices of cheese over the top of the cream cheese mixture on each tortilla, covering as much of the area as you can.
  • Place the turkey over the top of the cheese. Then lay a row of tomato slices, followed by a lettuce leaf, in a line down the middle of each tortilla.
  • Starting at one end of the tortilla parallel to the line of lettuce and tomato, roll tightly into a log shape.
  • Wrap the rolled tortillas in plastic wrap and refrigerate for 30 minutes to 1 hour or until ready to serve. This helps them firm up and makes slicing easier.
  • Remove plastic wrap and slice into 1" slices and serve immediately.
