Citrus-Berry Stuffed French Toast

Many Mother’s Days begin with a yummy breakfast for mom.  Whether you are making breakfast for your own mother or being surprised yourself with breakfast in bed, this citrus-berry stuffed French toast recipe is perfect.  I created it just for Mother’s Day.  

I wanted it to be fancy yet simple enough that dad and the kids can put it together.  If they can make french toast, they can make this.  If you would rather have someone make this for you on Mother’s Day, the recipe could always end up in an email as an idea for a Mother’s Day gift or printed out and placed on the fridge with the words “Hint, Hint”.

French toast is fabulous, but it’s even better when it is stuffed.  This gets a stuffing of sweet cream cheese with some orange marmalade added to give it a refreshing citrus twist.  I even sandwich the bread with the cream cheese the night before and keep it in the fridge.  Then in the morning all you have to do is beat the eggs and milk together and dip the “sandwiches”.
Then the french toasted is topped off with a simple berry syrup.  All the syrup is is some berries mixed with orange marmalade to carry on the citrus flavor in the filling.  I used a mixture of frozen berries that included strawberries, blueberries, blackberries, and raspberries.  You could even use fresh if you prefer and any combination you like.

Ingredients
  

Filling:

  • 1 8 oz. pkg cream cheese, softened
  • 2 Tbsp sugar
  • 3 Tbsp orange marmalade

Toast:

  • 14 pieces of Texas toast
  • 4 large eggs beaten
  • ¼ cup of milk
  • ½ tsp vanilla
  • butter about 4 Tbsp

Syrup:

  • 3 cups or 1 16 oz bag frozen mixed berries, partially thawed
  • ½ cup orange marmalade

Instructions
 

  • In a medium bowl, beat the cream cheese, sugar, and orange marmalade with a hand mixer until smooth. Spread on one side of 7 slices of Texas toast a spoonful of the filling mixture. Top with remaining 7 slices of Texas toast. (I did this the night before and put the sandwiches back in the plastic bag the bread came in, then in the refrigerator. Then I took the bread out of the fridge while I prepared the syrup and made the egg mixture.)
  • In a saucepan, heat the marmalade until warm.  Then carefully mix in the berries.  Continue heating until the berries are heated through.  Keep on warm while you prepare the French toast.
  • In a bowl, whisk the egg, milk, and vanilla together until well combined.
  • Preheat the oven to 400F . Spray a baking sheet with cooking spray and place in oven to warm up. Melt 1/2 tbsp or so of butter in a frying pan, use more of you are using a large skillet. Take the sandwiches, one by one, and place in the egg and milk mixture, turning so that the mixture covers both sides. Transfer the sandwich to the pan and cook until the first side is lightly brown. Flip over and cook the other side. When both sides are lightly browned, place the French on the baking sheet in the oven to keep warm until all are cooked.
  • Serve French toast topped with the berry syrup.
