Chili Cheese Frito Salad

You are going to be so surprised with today’s salad recipe.  It may sound a little strange, but it is so delicious!  I had this chili cheese frito salad at a potluck dinner with the women in my church.

The girl who brought was telling me how easy it was to make and what was in it.  I couldn’t believe the ingredients: canned corn, mayo, chili cheese fritos, cheese, peppers, and onions.  So easy and OHHHH SOOO GOOOOD!

The salad gets all the flavor from the seasoning on the Fritos.  So I came home and googled the recipe. I found different variations.  From those, I then created my own version based on what I was told was in the salad and the recipes I found in my search. I must say that I am not a huge fan of canned corn but totally don’t even care about that because this chili cheese Frito salad tastes that good.

  • CANNED CORN
  • RED PEPPER
  • GREEN PEPPER
  • RED ONION
  • GRATED CHEDDAR CHEESE
  • MAYONNAISE
  • CHILI CHEESE FRITOS

Ingredients
  

  • 3 14 oz. cans of corn, drained
  • ¼ of a red pepper diced
  • ¼ green pepper diced
  • ¼ red onion diced
  • 1 cup grated cheddar cheese
  • 1 ¼ cup mayonnaise
  • 1 9 1/4 oz bag of chili cheese fritos

Instructions
 

  • Combine corn, peppers,onion, cheese, and mayo in a bowl. Place in refrigerator until ready to serve.
  • Just before serving mix in the fritos. I save about a handful to sprinkle on the top. I also add a little tried parsley for color. Enjoy and eat it all because it’s not good as leftover. The fritos get too soggy.

    Just made this last night for a party and it was a hit! We didn’t incorporate the chips into the salad and instead put them in a bowl next to it and let everyone put as many chips as they wanted onto their serving of the corn salad. My thought was that we could save the leftover without having soggy chips but it turned out to be so good that there weren’t any leftovers to save! It was a great success and everyone LOVED and RAVED about it! Thanks for the recipe!

  7. I had never heard of this recipe until I saw you post it. I made it twice over the holiday weekend and took it to two different family gatherings. Everyone loved it! I substituted green onion, for the red and it was still delicious. Thanks for posting this one.

    We had this salad on the 4th of July and it was awesome. If you want it to be even easier, my cousin that made it just used canned Mexican corn instead of dicing up peppers and onions. And they also are from a small town with no chili cheese fritos available – she just used the regular ones and it rocked!! I guess you could add a bit of chili powder if need be, but it sure was tasty with just the plain ones!

  9. OMgosh, I HAVE to make this. It’s so unhealthy that I can’t bring myself to make it for me and my husband b/c we’d no doubt eat the whole thing in one sitting, so I think I’ll make it for a family reunion in September. My mouth is watering in anticipation!

  11. I first had this salad at the funeral dinner after my uncle passed a year ago. My mother and I sat at our table picking it apart and making notes of the ingredients because it is so good. I have made it numerous times since then and always get asked for the recipe.

  12. Does this salad keep very well? Or does it need to be eaten immediately? Just wondered if leftovers still taste good if the chips get soft. I’m going to try this soon.

  13. This would be great if they actually SOLD the chili cheese fritos in my area! Had them down in KY and loved them! Along with the cheese enchilada cheetos!
