Chicken Enchilada Soup and My Top 10 Soup Recipes

Last week, we had the weather change drastically here in Utah overnight. One day it was 89 degrees the next day it was 60 degrees. It’s also been raining off and on. The change in weather put me in the mood for soup. I went to my file of soup recipes I needed to try and found a couple I was ready to try out. This chicken enchilada soup is great because it’s made in your slow cooker.

It is very similar to the recipe for Crock Pot Chicken Tortilla Soup I have posted before. However, it’s amazing how just a few changes to a recipe can really give you a different flavor. This soup tastes just like a chicken enchilada. I also love the flavor that the little sprinkle of pepper jack cheese adds. Also, you can adjust the heat by what type of enchilada sauce you use. I stuck with mild.

The original recipe came from …And a Cookie For Dessert but I did alter the recipe a little. I am also going to share with you today my top 10 soup recipes. These are soups that I have shared before. I’m sure that as I try other soups my list may change, but as of today here’s what it is.

Then, make sure to come back tomorrow. I’m gonna share the new bread recipe I served along side this soup in addition to sharing my favorite bread recipe to accompany all those soup recipes. You’ll be all prepared for soup weather!

My Top 10 Soup Recipes
  1. Creamy White Bean – this soup uses some great spices along with chicken, sour cream and whipping cream.
  2. Crock Pot Potato Chowder – a yummy creamy potato soup that can be make in your crock pot that gets it’s creaminess from cream cheese.
  3. Crock Pot Tortilla Soup – this is the one that is similar to today’s post.
  4. Chicken Enchilada Soup – the recipe I posted today.
  5. Creamy Potato – This creamy soup is made with skim milk, but you’d never know it. Delicious and creamy!
  6. Clam Chowder – a deliciously creamy chowder recipe that came from my mom.
  7. Cheddar Ham Soup – so cheesy and a great use for leftover ham.
  8. Taco Soup – can can do stove top or crock pot here. I love to make this one with leftover roast.
  9. Sweet Chili – my version of my mom’s chili recipe. I make it every year for Halloween. I also love to make Navajo Tacos with the leftovers.
  10. Creamy Chicken Noodle – this is my absolute favorite homemade soup. I think it is #1 for my entire family.

Chicken Enchilada Soup


Ingredients

Scale
  • 1 15-ounce can black beans, rinsed and drained
  • 1 14.5-ounce can diced tomatoes (I used the kind with sweet onion in it)
  • 1 10-ounce package frozen whole kernel corn
  • 1/2 cup chopped onion
  • 1/2 cup chopped yellow, green, or red bell pepper (I used red, which is my favorite pepper)
  • 1 10-ounce can enchilada sauce (I used mild)
  • 1 10.75-ounce can condensed cream of chicken soup
  • 1 1/2 cups milk (I used skim)
  • 1 cup shredded Pepper jack cheese (4 ounces)
  • 2 chicken breasts

Instructions

  1. In a 3 1/2 to 5 quart slow cooker, combine drained beans, tomatoes, corn, onion, and bell pepper. Place 2 chicken breasts on top of mixture. In a large bowl, whisk together enchilada sauce and soup. Gradually whisk in milk until smooth. Pour sauce mixture over ingredients in cooker.Cover; cook on low heat for 6 to 8 hours or on high for 3 to 4 hours.
  2. Remove chicken and cut or shred into bite sized pieces. Add chicken back into soup.
  3. Top with pepper jack cheese and serve. Can also be topped with avocado, sour cream, or crushed tortilla chips. Note: if the soup is too thick for you, just add a little more milk after it’s all cooked.

Does anyone else use the large can of enchilada sauce?? I have been making this recipe for years now but always grab the 28 oz can of sauce. The soup consistency is perfect even with the extra liquid… just goes a little farther 😉 Also, I’m usually lazy and I just dump in a large jar of chunky salsa rather than all the veggies separately. We love it. One of our all time favorites!!!

Thank you SO much for sharing this recipe!! I’d had a ton of leftover pork butt that I’d cooked in the crockpot the day before, so I used that instead, plus some of the leftover juice. It was out of this world!!! My husband loved it, and with a little sour cream, it wasn’t too spicy for my one year old and my toddler, who both inhaled it! I’m going to do crockpot pork JUST for this soup!

I doubled it in my 7-quart crockpot, and that thing is nearly full to the brim! It’s going to feed my 5-person family for at least two to three days (might be more like 4). So I think you should be fine.

I LOVE this recipe! This is the 2nd time I’ve made it, I follow the recipe except I add a can of green chili’s and some Cumin, Chili powder, and a little hot sauce since we like spice. Top with cheese, sour cream and crushed tortilla chips. To die for!

I’ve made this soup several times and it is SO easy and a big hit with my family. I rarely have a package of just 2 boneless chicken breast halves, (usually more like 3 or 4) so it’s more like a stew, which is even better! I use canned tomatoes with green chiles (like Rotel) that add to the Mexican flavor, and the Pepper Jack cheese sprinkled on top gives it a zing! I must admit, I was a little freaked out the first time I layered raw chicken breasts on the veggies, but we were fine, and no salmonela (spelling?) poisoning! I have a very busy job and it’s so nice to come home to dinner “made”. Add a tossed salad and some corn muffins and we’re good to go! Thank you for the recipe!

The first night we ate this we both thought it was bland, so the next day I added chili powder, cumin and garlic powder. Also added a small can of diced green chilis. WOW, what a difference! We couldn’t stop eating it! And it’s so easy! Thanks for sharing.

Sarah,
The milk goes along with the condensed cream of chicken soup. It is part of the soup recipe, which is printed on the can. If you added milk right at the start, you did the right thing.

If you need more flavor… add chili powder and ground cumin (traditional enchilada spices)… if you want it hotter (spicier) use rotel for the tomatoes….

Made this recipe using mostly fresh veggies from my garden (tomatoes, corn, green peppers & onion) and used a larger can of enchilda sauce than your recipe called for. Added some spice to the crockpot as well.. taco seasonings, cayenne pepper, and cocoa chili blend. It was fabulous!!! We topped it w/ tortilla chips and sour cream.. I will definatley make this again! One of my favorite “new” crockpot soup recipes!

I've never posted on a blog before, but I absolutely HAD to for this recipe! This was SO freaking fantastic. I've made it 3 times in 2 weeks we love it so much! The first time I stumbled upon it I had no enchilada sauce, so I substituted taco seasoning mix…it was all I had. It was incredible! My family loves it and it is SOOO good the 2nd day.

This is super close to my Chicken Tortilla soup recipe! Hands down, my absolute favorite soup. I cut flour tortillas into strips and bake in the oven to serve on top.
