Ingredients to Make Cheesy Wild Rice Soup
- FAST-COOKING LONG GRAIN AND WILD RICE MIX
- MILK
- CREAM OF MUSHROOM SOUP
- VELVEETA
- BACON
- GREEN ONION
How to Make Cheesy Wild Rice Soup
Start this soup by preparing the package of wild rice blend according to the package directions on the stove. If you can’t find the fast-cooking version of the rice, the regular kind will work.
Just making it will take longer. The fast cook is ready in 10 minutes. The regular version is ready in 20 minutes.
After the rice cooks, add in the milk, cream of mushroom soup, and Velveeta. That Velveeta is where the cheesy goodness of the soup comes from.
Cook and stir until you completely melt the cheese, and heat the soup through. Serve each bowl topped with some of the bacon and green onion (or fresh chives). If you like crackers, oyster crackers are another great addition

Frequently Asked Questions
Can I make this soup ahead of time?
Yes, you can make this soup ahead of time and store it in the refrigerator for up to 3 days. Simply reheat it gently on the stovetop or in the microwave before serving. You may need to add a splash of milk or water to thin out the soup if it thickens upon reheating.
Can I add veggies to the soup?
Yes, feel free to customize the soup and make it heartier with vegetables. Microwave a package of your favorite frozen vegetable combination.
Or saute up some fresh mushrooms in a little butter or olive oil until tender. All would be delicious additions to add taste and texture to the soup. Just add in when you add the Velveeta.
Can I freeze leftover soup?
While freezing creamy soups with milk and cheese is possible, it’s best to consume them fresh for the best texture and flavor.
What should serve I serve along with this soup?
Serve with slices of crusty French baguette or artisan bread alongside the soup for dipping. The bread’s crunchy exterior and soft interior are perfect for soaking up the creamy broth. You can also try a side salad like a mixed green salad with vinaigrette or a Caesar salad. It helps balance the richness of the soup and adds a fresh touch to your meal.
