Easy Cheesy Wild Rice Soup

You only need a few ingredients to make this delicious wild rice soup. Plus, it comes together in about 30 minutes. I love wild rice soup and the addition of cheese is a tasty twist.

The smooth cheese goes well with the nutty flavor and texture of wild rice, making a tasty dish that will warm you up. Whether you’re savoring a cozy night in or entertaining guests, this cheesy wild rice soup is guaranteed to be a hit.

Start this soup by preparing the package of wild rice blend according to the package directions on the stove. If you can’t find the fast-cooking version of the rice, the regular kind will work.

Just making it will take longer. The fast cook is ready in 10 minutes. The regular version is ready in 20 minutes.

After the rice cooks, add in the milk, cream of mushroom soup, and Velveeta. That Velveeta is where the cheesy goodness of the soup comes from.

Cook and stir until you completely melt the cheese, and heat the soup through. Serve each bowl topped with some of the bacon and green onion (or fresh chives). If you like crackers, oyster crackers are another great addition

Yes, you can make this soup ahead of time and store it in the refrigerator for up to 3 days. Simply reheat it gently on the stovetop or in the microwave before serving. You may need to add a splash of milk or water to thin out the soup if it thickens upon reheating.

Ingredients
  

  • 1 pkg (6.2 oz) fast cooking long grain and wild rice mix
  • 4 cups milk
  • 1 can (10 3/4 oz) condensed cream of mushroom soup
  • 8 oz of Velveeta cubed
  • ½ lb bacon cooked and crumbled
  • diced green onion

Instructions
 

  • In a large sauce pan, cook rice according to package directions.
  • Add the milk, soup, and Velveeta to the mixture, cook and stir until the cheese has melted and everything is heated through. If you need to thicken the soup, mix a Tbsp of cornstarch with 2 Tbsp of water. Mix into the soup and cook a little longer to thicken.
  • To serve, top with crumbled bacon and diced green onion. Serves 6.
