Broccoli Chowder and Challenge Butter Giveaway (Closed)

Today, I have a deliciously easy broccoli chowder made using Challenge Butter along with a giveaway. It has been between 7 and 10 degrees in the morning when I have been taking my kids to school. My daughter doesn’t even get recess because the temperature is too cool (plus we are having red air quality – one of the down sides to living in the Salt Lake Valley surrounded by mountains).  The weather man also said on the news that it is even too cold to snow! I didn’t even realize that was possible.  This chowder was the perfect thing to help warm up my family when dinner time rolled around. I also made a loaf of bread to accompany the bowls of this comforting soup.

The soup itself includes a rich and creamy cheesy base with chunks of ham and tender broccoli florets mixed in with some bits of onion.  I can always get my kids to eat broccoli if it involves cheese.

Ingredients
  

  • 1 pound frozen broccoli florets
  • cups chicken broth
  • 4 Tbsp Challenge Danish Creamery Butter (½ stick)
  • 1 medium sized onion chopped
  • 4 Tbsp flour
  • cups milk
  • cups 6 oz sharp cheddar cheese, cut into small cubes
  • ground black pepper to taste
  • 1 cup 6 oz fully cooked ham, cut in ⅜-inch cubes
  • salt to taste
  • shredded cheddar cheese optional garnish

Instructions
 

  • Combine broccoli and broth in microwave-safe covered container and microwave on high for 2-33 minutes or until broccoli is just tender. Drain and save liquid and set both aside.
  • Melt butter over medium–low heat in a 4 quart pot. Add onions and sauté until limp but not browned.
  • Add flour to pot and cook stirring for about 3 minutes until the flour cooked but not browned.
  • Stir in cooking liquid from broccoli and milk; cook until mixture starts to thicken.
  • Add cheese cubes and black pepper, ham and broccoli; stir over medium heat until cheese melts. Heat through but do not boil. Salt to taste. Serve hot. Serves 4-5.

  1. I like to use real butter in a lot of my baking. And there is NOTHING better than a good homemade buttercream frosting!

  2. I love cooking with butter, especially the new flavored ones like the Tuscan Style because they add so much flavor to whatever I am cooking, especially vegetables.

  3. I use real butter only. I used to only use margarine and then when they came out and said how bad it was for you we switched to butter and I never looked back! I LOVE butter!

  4. I use it in everything from baking cookies to forming the bases of soups and sauces. I finally tried my first ever hollandaise from scratch this weekend. Challenge butter & farm fresh eggs made the flavor really shine!

  5. I usually bake with it, saute veggies or spread it on waffles/pancakes etc.. I use to be a country crock girl but now it’s butter all the way!

  11. I use at least 3 lbs of butter a week! I use it in baking every day. Whenever I saute, I use a mixture of oil for heat and butter for flavor. I use butter anytime I turn the heat on to cook.

  12. In my home we have never used margarine… only and always butter (way more natural and better for you). Sauteing veggies, on all breads, and use in baking!! Yummm – butter 😀

  13. I use butter in just about everything!! My favorite way is probably slathered on a good ole’ grilled cheese sandwich!!

  14. mmmmm… butter! Must have it for everything! I cooked an onion in butter for the soup we had for dinner tonight and we used butter on our pancakes this morning.

  15. We use butter quite a bit, when making cookies or in macaroni and cheese, and always in our scrambled eggs in the mornings.

  16. I love baking with butter–especially when I make Scotch Shortbread! Since they only have three ingredients, it’s important that all of the ingredients are good-quality–you just can’t substitute!
