Blitz Bread

I just found this recipe for Blitz Bread posted by Melanie on Mel’s Kitchen Cafe. She got it from the King Arthur’s flour site, so if you want detailed pictures, click on the link that I made.

Anyway, I had to give it a try. It sounded way too easy. Basically, to make this bread you mix the dough ingredients, spread it in a pan, leave it for 1 hour, then bake it. Too easy. Granted there is time involved, but it’s time just waiting for the dough to rise and cook. It was so easy and yummy.

Blitz Bread is similar to a focaccia.

I think this bread would best be served along with a bowl of soup or some pasta. The consistency of the bread would be perfect for dipping into soup or sopping up pasta sauce. It’s got a little crunch on the outside, with chewy goodness in the middle. It’s similar to Focaccia. There is also some versatility to this bread. You can use what ever herbs go along with what you will serve it with.

Now, this first time I didn’t add the garlic and herbs to the dough as listed in Melanie’s recipe. I knew the seasoning mix I was going to sprinkle on the top was pretty strong, so I didn’t want the bread to be too over powering. Johnny’s garlic spread and seasoning is what I used to sprinkle on top. I got a big bottle of it from Costco or Sam’s Club. I can’t remember which one. The seasoning has garlic, Parmesan cheese, oregano, basil, and parsley in it. I can’t wait to try it again with some different herbs.

This recipe is definitely a keeper. Come back tomorrow when I am going to share one of my favorite dessert recipes. It’s a twist on a classic bakery treat.

Ingredients
  

  • 1 ½ cups warm water
  • 3 Tbsp olive oil plus additional for drizzling
  • 1 ¼ tsp salt
  • 3 ½ cups all-purpose flour
  • 1 Tbsp instant yeast
  • ½ tsp garlic salt
  • 1 Tbsp dried herbs
  • dried herbs for sprinkling

Instructions
 

  • Lightly grease a 9" x 13" pan ( I used non-stick spray), and drizzle 1 to 2 tablespoons olive oil in the bottom.
  • Combine the water, olive oil, salt, flour, yeast, garlic salt and 1 Tbsp dried herbs together and beat at high speed with an electric mixer for 60 seconds. (I used my kitchen aid, but didn't use the dough hook. I used the paddle type attachment. The one I use to mix cookie dough)
  • Scoop the sticky batter into the prepared pan, cover the pan, and let it rise at room temperature for 60 minutes, till it is puffy.
  • While the dough is rising, preheat the oven to 375°F.
  • After the dough rises, gently poke the dough all over with your index finger.
  • Drizzle it lightly with olive oil, and sprinkle with the dried herbs of your choice, if desired.
  • Bake the bread at 375 degrees for 35 to 40 minutes until it’s golden brown.
  • Remove it from the oven, wait 5 minutes, then turn it out of the pan onto a rack. Serve warm or at room temperature.

Notes

To make cheese-stuffed bread: Add 1 cup crumbled feta cheese to the dough after it's been kneaded for 60 seconds.
