No Bake Peanut Butter Bars {Gluten Free}

A while back, I had a little get together. Some of the guests who would be attending had gluten allergies. I wanted to make a treat I was sure that they could eat. As a result, I ended up settling on these no bake peanut butter bars. They were a hit with all of my guests. I mean how can you loose with creamy peanut butter, crispy cereal, and a drizzle of chocolate!

You make these by cooking peanut butter, corn syrup, brown sugar, sugar, cinnamon, and vanilla in a sauce pan until the sugar dissolves. This mixture is then poured over a combination of Rice Krispie and Rice Chex cereals. Once coated the mixture gets pressed into a 9 x 9 inch dish that has been sprayed with non-stick spray.

Next, you let these cool for five minutes. The you microwave some chocolate chips with a little shortening and drizzle over the pan. Allow the pan to cool completely so the chocolate is set before cutting it into bars. These no bake peanut butter bars are the perfect combination of peanut butter and chocolate.

  • GLUTEN FREE RICE KRISPIE CEREAL
  • RICE CHEX
  • PEANUT BUTTER
  • CORN SYRUP
  • BROWN SUGAR
  • SUGAR
  • CINNAMON
  • VANILLA
  • SEMI-SWEET CHOCOLATE CHIPS
  • SHORTENING

Ingredients
  

  • 1 ½ cup gluten free Rice Krispie cereal
  • 2 cup Rice Chex
  • 1 cup peanut butter
  • ½ cup corn syrup
  • cup brown sugar
  • ¼ cup sugar
  • ½ tsp cinnamon
  • 1 Tbsp vanilla
  • ¼ cup semi-sweet chocolate chips
  • 2 tsp shortening

Instructions
 

  • Spray a 9 x 9 inch dish with non-stick cooking spray.
  • Place the Rice Krispies and Chex in a bowl and combine.
  • In a sauce pan, combine the peanut butter, corn syrup, brown sugar, sugar, cinnamon, and vanilla.
  • Cook over low heat until all is well combined and sugars have dissolved. This will take a minute or two.
  • Pour mixture of cereals and combine until cereal is well coated.
  • Pour mixture into the prepared 9 x 9 pan and press into the pan. Let cool for 5 minutes.
  • Place the chocolate chips and shortening in a microwave safe bowl. Microwave for 15 - 30 seconds until melted and smooth. Drizzle or pipe the chocolate over the cooled bars. Serves 12.

    Thanks for the recipe! My daughter is Celiac, so any GF recipes are welcome! You may want to note that in order for the recipe to be GF, you MUST use GF Rice Krispies. Regular Rice Krispies have malt in them which contain gluten. But thankfully they do make gluten free Rice Krispies!
