Southwest Grilled Chicken

Here is another tasty way to grill up chicken breasts. This Southwest grilled chicken is made using a simple marinade. I will also be sharing two ways you can use the chicken tomorrow. However, this chicken is great to eat all on it’s own too. However, when I made this I made extra to use for my other meals. If I’m grilling chicken I like to make extra and use it for other meals.


This marinade for the southwest grilled chicken is made with some canola oil and then you add in some smoked paprika, coarse kosher salt, cumin, garlic powder, basil, pepper, and little cayenne pepper. Then you add in some chicken breasts and allow it to soak in the marinade for up to 8 hours.
After that, it’s time to place the chicken on the grill. However, if you aren’t up for grilling you can cook it in a skillet of in the oven. Grilling I think give the best flavor but any other method will work just fine.

Here is what you need to make the

- SMOKED PAPRIKA
- COARSE, KOSHER SALT
- GROUND CUMIN
- GARLIC POWDER
- DRIED BASIL
- BLACK PEPPER
- CAYENNE PEPPER
- CANOLA OIL
- THIN CUT CHICKEN BREASTS

Southwest Grilled Chicken

Ingredients
- 1 ½ tsp smoked paprika
- ¾ tsp coarse kosher salt
- 1 ½ tsp ground cumin
- ¾ tsp garlic powder
- ½ tsp dried basil
- ¼ tsp black pepper
- ¼ tsp cayenne pepper more or less to taste
- 4 Tbsp canola oil
- 4-6 thin cut chicken breasts
Instructions
- Combine the smoked paprika, salt, cumin, garlic powder, basil (or Italian seasoning), black pepper, cayenne pepper, and olive oil in a gallon sized ziploc bag. Knead to combine ingredients.
- Add in the chicken and knead to coat. Place in the fridge for up to 8 hours.
- Preheat an outdoor grill to medium or medium-high. (Alternately, you could cook the chicken in a skillet on the stove or broil in the oven.) Grill for 4-6 minutes per side until cooked through. Serves 4-6.
