This slow cooker beef enchilada chili is the last of the soup posts I have for you for this week. There is still time to enjoy #nationalsoupmonth before the month is over.

I have a chili recipe for you today that incorporates the flavors of beef enchiladas. It would be perfect to serve at your Super Bowl party. This chili is man pleasing and filling. I love it topped with shredded cheese and a dollop of sour cream, the same way I enjoy regular beef enchiladas.

• ▢ 1 ½ lbs beef stew meat
• ▢ 2 Tbsp chili powder
• ▢ ½ tsp salt
• ▢ ¼ tsp pepper
• ▢ ½ tsp oregano
• ▢ 2 tsp minced garlic
• ▢ ⅛ cup chopped cilantro
• ▢ 1 cup diced red onion
• ▢ 2 15 oz cans petite diced tomatoes
• ▢ 1 19 oz can enchilada sauce
• ▢ 2 15 oz cans pinto beans, drained

Instructions

 

• Combine all of the ingredients into a slow cooker.
• Cover and cook on low for 9 hours. Serves 6-8.
