Then the morning that you want the pancakes, just mix in the pancake ingredients into the starter. Finally, you cook the pancakes. The entire process produces tender, light, and airy sourdough pancakes. It is well worth the time it takes. Simple Sourdough Pancakes

- 2 cups flour
- 1 tsp sugar
- 2 cups warm water
- 2 envelopes dry active yeast
For the pancakes:
- 2 slightly beaten eggs
- 1 tsp baking soda
- 1 tsp salt
- 1 Tbsp sugar
- 2 Tbsp vegetable or canola oil
- In a 2 qt bowl, mix it together the starter ingredients. Cover leaving a very small opening to vent. Let the batter sit at room temperature 24 to 48 hours.
- To prepare the pancakes, add the pancake ingredients to the starter. Whisk together and allow batter to sit for 5 minutes. Cook pancakes on an oiled grilled.
