Simple Sourdough Pancakes

Whether you want a quick hot breakfast to fix the kids on a school morning or you want a great breakfast on the weekend, these simple sourdough pancakes are a perfect option.
First, this pancake recipe is prepared by beginning with a starter that you mix together 24-48 hours ahead of time. Next, you let that starter sit on the counter for 24-48 hours.
Then the morning that you want the pancakes, just mix in the pancake ingredients into the starter. Finally, you cook the pancakes. The entire process produces tender, light, and airy sourdough pancakes. It is well worth the time it takes. You just have to plan ahead to make the starter and give it enough time to sit on the counter. Other than that, they really are simple to make.

Ingredients
Starter:
- 2 cups flour
- 1 tsp sugar
- 2 cups warm water
- 2 envelopes dry active yeast
For the pancakes:
- 2 slightly beaten eggs
- 1 tsp baking soda
- 1 tsp salt
- 1 Tbsp sugar
- 2 Tbsp vegetable or canola oil
Instructions
- In a 2 qt bowl, mix it together the starter ingredients. Cover leaving a very small opening to vent. Let the batter sit at room temperature 24 to 48 hours.
- To prepare the pancakes, add the pancake ingredients to the starter. Whisk together and allow batter to sit for 5 minutes. Cook pancakes on an oiled grilled.
