Simple Fluffy Waffles

This week, I am sharing breakfast recipes that will be perfect to enjoy during this month of December. They will work great for Christmas breakfast or New Year’s breakfast. We are starting off the week with a recipe for simple fluffy waffles.

The best way to achieve a fluffy waffle is to separate the egg yolks from the egg whites. Then you whip the egg whites until stiff peaks form. Finally, you fold the whipped egg whites into the waffle batter.

This is the process used to make these fluffly waffles. The rest of the ingredients needed to make these are all simple ingredients you should have on hand. It includes flour, sugar, baking powder, salt, eggs, milk, and canola oil.

You can serve these simply fluffy waffles topped with good old butter and maple syrup. However, I have many other delicious syrup recipes that would be great to serve over these delicious waffles. I am kind of partial to the spiced buttermilk syrup. However, every one of them is delicious.

Ingredients
  

  • 2 cups flour
  • 1 Tbsp sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 3 eggs separated
  • 2 cups milk
  • ¼ cup canola oil

Instructions
 

  • In a bowl, combine the flour, sugar, baking powder and salt.
  • In another bowl, combine the egg yolks, milk and oil; stir into dry ingredients just until moistened.
  • In a small bowl, beat egg whites until stiff peaks form, Add to waffle batter and gently fold into batter. Bake in a preheated waffle iron according to manufacturer's directions. This made 9 waffles for me using 1/2 cup batter for each waffle.
