These Simple Fluffy Waffles are light, tender, and made with basic ingredients you probably already have on hand. Whipped egg whites are gently folded into the batter to give the waffles their extra-fluffy texture. Serve them warm with butter, maple syrup, fruit, or your favorite homemade syrup for an easy breakfast or brunch.
In a bowl, combine the flour, sugar, baking powder, and salt.
In another bowl, combine the egg yolks, milk, and oil; stir into dry ingredients just until moistened.
In a small bowl, beat egg whites until stiff peaks form. Add to the waffle batter and gently fold. Bake in a preheated waffle iron, following the manufacturer's directions. This made 9 waffles for me, using 1/2 cup of batter for each waffle.
