Punched Up Potato Salad

This whole week I am doing recipes for the Memorial weekend like this punched up potato salad.  Whether you are grilling or having a picnic, hopefully I will be able to help you out. Memorial weekend is usually the kick off for Summer here in Utah.  It is usually when the outdoor pools open up and Lagoon (a local theme park) is open all week and not just weekends.  The kids only have a few days of school left and we are already to celebrate the holiday weekend in one way or another.  I’m not sure how this year will pan out though.  We have been experiencing record rain fall and cool temperatures, fingers crossed!

Today, we start off with jazzing up some store bought potato salad.  Potato salad is frequently included in any Memorial Day menu.  I must say, I am not a fan of store bought potato salad.  They all have a taste to them that I just don’t like.  So I thought, I wonder if I could  jazz up pre-made potato salad from the store so I would enjoy it.  The answer I soon discovered was, YES YOU CAN!

If you just need to simplify your bbq menu or need a quick side dish for the neighborhood potluck, this punched up potato salad is the perfect solution.  I love the freshness that the lime and cilantro add to salad.  The picture also shows you a cute way to serve up potato salad at any gathering you may be having this summer.  All you have to do is dip the rim of the plastic cups in lime juice and then in some bbq seasoning (I used McCormick Grill Mates Barbecue), then add a lime wedge for garnish.  Isn’t that a fun new way to serve up a bbq classic?  If you don’t want to go for this jazzed up store bought potato salad recipe then go for my homemade potato salad recipe.

Punched Up Potato Salad


Ingredients

Scale
  • 32 oz container of potato salad
  • 1/4 cup chopped cilantro
  • 3 green onions, chopped
  • 1 tsp lime zest
  • 2 tsp lime juice

Instructions

  1. Place the potato salad in a large bowl and mix in the remaining ingredients.

I have the same feelings about store-bought potato salad. They are usually either bland or…ick… cloyingly sweet.
Trader Joe’s has a potato salad that is… decent. Nothing to write home about. But it’s the best store bought PS I can find. It’s more on the bland side and I find the potatoes themselves mushy.
I add the following:
– One left over baked potato. Cubed
– 1/4 cup of plain Greek yogurt
– 1/2 diced white onion
– 1/2 tablespoon of pickled relish
– LOTS of black pepper
– coarse salt
It’s delicious!
I think the common denominator in Laura’s punch up and others I’ve seens is the addition of fresh ingredients and with bright flavors.
I am not sure what to do with those gross “sweet” versions. Krogers/Ralphs brand is particularly offensive. It’s even worse with macaroni salad! But that’s so easy to make at home in any case.
