Peanut Butter Cookies

I love peanut butter cookies and this is my go to recipe when I want them. This recipe came from a good friend. I got the recipe from her after she made the cookies for us and my husband actually ate them. Normally he wouldn’t ever eat peanut butter cookies.

This recipe has a little versatility to it. You can scoop ’em up plain, roll them in sugar, or mix in some chocolate chips. I like to do half plain and half with chocolate chips. I also cook these cookies until they are just slightly golden brown and then let them sit on the tray for a few minutes.

Ingredients

  • ¾ cup butter or margarine I use butter
  • 1 cup white sugar
  • 1 cup brown sugar packed
  • ¾ cup peanut butter
  • 2 eggs
  • 2 tsp vanilla
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 ½ cups flour
  • optional: chocolate chips you need a 12 oz bag for the entire recipe, I like to do half the recipe

Instructions

  • Mix margarine, sugars, peanut butter, eggs, and vanilla together until well combined.
  • Then add soda, salt, and flour. Mix just until combined. This is a really soft dough. This is where you can add chocolate chips or roll the cookies in sugar, if you like.
  • Bake at 350 degrees for 10-12 minutes, just until they start to get a little brown (you'll probably think they need to cook longer but don't do it unless you want crunchy cookies). Then cool on the cookie sheet for a few minutes before putting them on a cooling rack. Makes around 4 dozen cookies.

i wanted (needed? ha ha) pb cookies this afternoon and while i have several recipes, i figured you or mel would have a good one. this one is outstanding! i was so worried the dough would be better than the cookie (does that ever happen to you?) (this dough is SO good!!), but they were perfect! you should flashback these because i think the world is missing out having them buried in 2009. 🙂 thanks for sharing these! oh, i made them with butter like you do. 😉
