This week on RMK it’s summer snack attack week. With the kiddos out of school I am sure you have heard this question as often as me “What can I have for a snack?” I have the usual popsicles, crackers, fruit, string cheese etc. but it is now to the point where we need something new. So if your kids need a snack why not have them make something, something like this minute blueberry cake.
It gets them the snack they are looking for, helps them learn cooking skills, and keeps them busy for a bit.
Today’s recipe is a quick cake you whip up in the microwave. I happen to make a blueberry version, but you could use raspberries, blackberries, peaches, etc in it’s place. I also used nuts but you can leave them out, or chocolate chips would be a nice substitute. 🙂 Yummy, I love this quick minute blueberry cake!
Here is what you need to make the
Minute Blueberry Cake
- ALL PURPOSE FLOUR
- BAKING SODA
- SALT
- CINNAMON
- CANOLA OIL
- SUGAR
- MILK
- BLUEBERRIES
- WALNUTS
- ICE CREAM OF WHIPPED CREAM
Minute Blueberry Cake
Ingredients
- 3 Tbsp all purpose flour
- 1/4 tsp baking soda
- pinch of salt
- pinch of cinnamon
- 1 Tbsp canola oil
- 1 Tbsp sugar
- 1 Tbsp plus 1 tsp milk
- a few blueberries
- a few chopped walnuts
- a little ice cream of whipped cream, optional
Instructions
- In a small bowl , combine the flour, baking powder, salt, cinnamon, oil, sugar, and milk. Pour the mixture into a ramekin or other small microwave safe dish. Spread evenly to cover the bottom of the dish.
- Sprinkle with a few blueberries and nuts. Then microwave for 1 minute. That’s it. Enjoy it warm with a little ice cream or whipped cream if you’d like.

The problem is the baking SODA listed in ingredients should be baking POWDER. Baking SODA will make it bitter. Baking POWDER will not. 🙂

I had the same problem as Emily–bitter. I don’t have ice cream or whipped cream and that may have made all the difference. I don’t know. Was it supposed to be two tablespoons of sugar instead of teaspoons? I am absolutely in love with the idea!

So sorry the cake was bitter for you. The 2 tsp is correct, but I have upped it in the recipe now to 1 Tbsp, which should work just fine. Sometimes the taste can vary on the fruit. If the blueberries aren’t really sweet you may need to add more sugar. This cake isn’t a supper sweet cake either. It really taste more like a muffin type cake to me. I’ll try the cake out again and do it with no fruit, just by itself and see how it is. Then I’ll give an update on the post.
We made these last night – very tasty and quick dessert! I noticed in the ingredients list it lists baking soda, where as in the instructions it lists baking powder. I used baking powder and didn’t find it bitter at all, just the right sweetness. Thanks for sharing this recipe!
This cake actually turned out VERY bitter for me. It did not have enough sugar in it. We put whipped cream on top, which helped, but once I ran out of whipped cream, I threw the rest of the cake out because it was not good just on it’s own. I am not sure if it would mess things up if you added more sugar, but it definitely needs more! I have a brownie in a mug recipe, and it calls for equal parts of flour and sugar! Definitely not sweet enough for me, or my husband (and he doesn’t even like things very sweet!) I think the recipe just needs some tweeking. Thanks for sharing!

This looks great! I love how easy this would be to whip up for my family and that a few fiber-rich ingredients have been included. I can’t wait to give this a try.
I have seen other recipes for cakes and brownies in the microwave but have never tried it! This version looks delicious!
