HAPPY MEMORIAL DAY! Here is your menu plan Monday – week 30. This weeks meal plan includes a grilled chicken breast tostada recipe. You can grill an extra chicken breast when you make it to serve up for the BBQ Chicken Salad later in the week for easy meal prep.
The tostada recipe also includes pico de gallo and guacamole. I have listed both on the shopping list. However, you can make your own and I have links to recipes included in the grilled chicken breast tostada recipe if you want to go that route.
BBQ Chicken Salad – grab a rotisserie chicken and this is a no bake meal. However, feel free to cook your chicken if you prefer.
Pain Perdu (a.k.a. French Toast) – I was originally drawn to this his recipe because you top it with sliced strawberries mixed with sugar and orange rind. I must say I love the strawberry/orange rind topping. It was a different and tasty combination of fresh fruit.
Hula Joes – I like the idea of a sloppy joe with a sweet Hawaiian twist. I must tell you that we were all pleasantly pleased at the wonderful flavor of this sandwich. The ground pork in it is delicious.
Grilled Chicken Breast Tostadas – This tostada recipe is different because you don’t use refried beans as a base, but you totally could if you want to.  The other fun thing about this recipe is you use your grill to cook the chicken and to make the tostada shell.
Chow Mein Bake – I recently stumbled across a recipe that took me back to my childhood. I recall eating a simple chow mein bake as a child. It involves rice, hamburger, cream of mushroom soup and chow mein noodles.
