This Instant Pot Chicken and Rice Soup is seriously the easiest chicken with rice soup. It is ready in about 20 minutes thanks to the Instant Pot pressure cooker.

It also only takes 8 ingredients to make this. You can make it with chicken or this would be a great way to use up leftover turkey after Thanksgiving. If making this with chicken, I use a rotisserie chicken from Costco. It’s a simple and tasty soup.

You want to start by rinsing off the rice in cold water. This will remove the excess starch from the rice. Then you are going to add it into the Instant pot along with your cooked chicken or turkey, carrots, celery, chicken broth, garlic, Better Than Bouillon, and dried parsley.

Once everything is in the Instant Pot you set it to cook on high pressure for 2 minutes. Yep, it only needs to cook for 2 minutes. That’s enough time for the rice to cook and the veggies to get tender.

Ingredients

  • 1 cup long grain rice
  • 23 cups diced cooked chicken or turkey
  • 2 cups diced carrots
  • 1 cup diced celery
  • 8 cups chicken broth
  • 1 Tbsp diced garlic
  • 1 Tbsp Better Than Bouillon
  • 1/2 Tbsp dried parsley

Instructions

  1. Rice rice in cold water until water is no longer cloudy. Add to the instant pot along with the other ingredients.
  2. Put the lid on and seal. Set to manual for 2 minutes. Once finished manually release, Serves 4-6.
