Hot Cheesy Kale and Bacon Dip plus Sargentos Chopped Challenge

Sargento is hosting a “Chopped at Home” contest, and they wanted to see what I could do for the Chopped challenge with Sargento cheese! How about Hot Cheesy Kale and Bacon Dip?
I love to get creative. Challenges like this push that creativity and some time the results can be outstanding. So, I came up with my best Chopped-inspired dish featuring Sargento Shredded Cheese.
Here is the list of ingredients I had to include:
- Sargento® Chef Blends 4 State Cheddar
- Kale
- Oyster Crackers
- Bacon
The 4 State Cheddar include Sharp Wisconsin Cheddar, Sharp Vermont Cheddar, Sharp New York Cheddar and Mild California Cheddar which come together to offer true Cheddar enthusiasts a complex, full range of delicious flavor.
I’m not extreme familiar with kale. I use it in soup and as something to used when plating food, but that’s about it. So, when I discovered that you could get kale in the frozen food section of the store I knew what I was going to make for the challenge.
I opted for a spin on a spinach dip using the cheese, kale and bacon. Also, I added in some cream cheese and garlic. Then, I was left with what to do with the oyster crackers. Lastly, I remember a bacon dip recipe I make that gets topped with crushed crackers and decided to crush the oyster crackers to top of the dip.
I must say that it was pretty tasty! You can serve it up with tortilla chips, veggies, pita chips or my favorite, slices of baguette bread.

Hot Cheesy Kale and Bacon Dip

Ingredients
- 2 8 oz pkgs. of light cream cheese
- 1 10 oz pkg frozen spinach, thawed and drained
- ⅓ cup fully cooked diced bacon
- ⅔ cup Sargento® Chef Blends 4 State Cheddar shredded cheese
- 1 Tbsp chopped garlic
- ½ cup oyster crackers crushed
Instructions
- Preheat oven to 350 degrees.
- Combine all of the above ingredients together EXCEPT the cracker.
- Spread into a 9 inch pie plate and top with crushed crackers.
- Bake at 350 degrees for 20-25 minutes until hot and crackers are starting to brown.
