Today I have another delicious variation of mac and cheese to share with you. This one is an Easy No Roux Stovetop Mac and Cheese, which means you can skip the extra step of making a traditional flour-and-butter roux. Instead, cream cheese helps create a rich, creamy base for the cheese sauce, making this recipe simple to prepare while still delivering the smooth, comforting texture everyone loves.
When my kids were younger, I loved using summertime as an opportunity to get them into the kitchen and help them learn basic cooking skills. Each of them would choose a dinner to make, and then we would prepare it together. This mac and cheese is the kind of recipe that works perfectly for that because it is simple, approachable, and a great way to practice stovetop cooking.

Along with the cream cheese, the cheese ingredients include sharp cheddar, Monterey Jack, and a little American cheese. More than one type of cheese gives the sauce plenty of flavor while also helping it melt smoothly. A little half-and-half adds extra creaminess, while salt, garlic powder, and Worcestershire sauce round everything out with just the right savory flavor.
Ingredients for No Roux Stovetop Mac and Cheese
- CAVATAPPI OR ELBOW PASTA – The pasta is the base of the dish and holds all of that creamy cheese sauce. Cavatappi is great because the twists grab onto the sauce well, but elbow macaroni works just as well and gives it that classic mac and cheese feel.
- SHARP CHEDDAR CHEESE – Sharp cheddar brings bold, classic mac and cheese flavor. It gives the sauce richness and that familiar cheesy goodness that makes the dish so comforting.
- MONTEREY JACK CHEESE -Monterey Jack adds extra creaminess and melts beautifully into the sauce. It helps create a smooth texture while balancing the cheddar’s sharper flavor.
- AMERICAN CHEESE – A little American cheese helps make the sauce extra smooth and creamy. It melts very easily and helps give the mac and cheese that silky stovetop texture.
- CREAM CHEESE – Cream cheese is what helps this recipe stay creamy without needing to make a roux. It adds richness and helps create a thick, velvety cheese sauce.
- BUTTER – Butter adds flavor and richness to the dish. It helps bring everything together and adds an extra layer of comfort-food goodness to the sauce.
- HALF AND HALF OR MILK – Half and half makes the sauce especially rich and creamy, while milk is a lighter option that still works well. Either one helps loosen the cheeses into a smooth sauce.
- SALT – Salt helps bring out all of the cheesy flavor and seasons the dish properly. Even a small amount makes a big difference in the final taste.
- GARLIC POWDER – Garlic powder adds a little savory flavor without overpowering the cheese. It gives the sauce just a bit more depth.
- WORCESTERSHIRE SAUCE – Worcestershire sauce adds a subtle, savory richness that helps round out the cheese sauce’s flavor. You do not need much, but it gives the mac and cheese a little extra something special.

Instructions for No Roux Stovetop Mac and Cheese Recipe
Start by bringing a large pot of salted water to a boil. Cook the pasta according to the package instructions until it is tender. Once it’s al dente, drain the pasta and set it aside for just a moment.
In the same pot you used to cook the noodles, add the butter, cream cheese, sharp cheddar, and Monterey Jack. Return the drained pasta to the pot, placing it right on top of the cheeses and butter. Then add the American cheese slices along with about 1 cup of the half-and-half or milk.
Place the pot back on the stovetop over low heat and give everything a good stir. Add the salt, garlic powder, and Worcestershire sauce, then continue stirring as the cheeses begin to melt. Once the mixture starts to come together, pour in the remaining 1/2 cup of half-and-half or milk.
Keep stirring until all of the cheeses are fully melted and the sauce is smooth and creamy. It can take a few minutes for everything to fully incorporate, so just keep stirring gently over the low heat. If needed, add a little more half-and-half or milk until the mac and cheese reaches the creamy consistency you like.
Serve it right away while it is hot, smooth, and extra cheesy.

Frequently Asked Questions
What does no roux mean?
A no-roux mac and cheese skips the usual butter-and-flour base often used to make cheese sauce. In this recipe, cream cheese helps create a smooth and creamy sauce instead.
Can I use elbow macaroni or do I need cavatappi?
Either one works well. Cavatappi holds onto the sauce nicely, while elbow macaroni gives it that classic mac-and-cheese feel.
Can I use only one kind of cheese?
You can, but the blend of different cheeses gives the best flavor and texture. Each cheese helps create a sauce that is both flavorful and smooth.
Why is American cheese used in the recipe?
American cheese melts very smoothly and helps make the sauce extra creamy. It gives the mac and cheese that silky stovetop texture.
Can I make this recipe ahead of time?
This recipe is best served right after making it while the sauce is at its creamiest. You can reheat leftovers, but the texture is usually best fresh.
How do I keep the cheese sauce smooth?
Use low heat and keep stirring as the cheeses melt. Adding the liquid gradually also helps keep the sauce creamy.
Can I add more milk if it seems too thick?
Yes. You can add a little extra milk or half-and-half until it reaches the creaminess you like.
Can I add other ingredients to this mac and cheese?
Yes. Cooked bacon, ham, chicken, or even steamed broccoli would all be great additions if you want to change it up.
What can I serve with stovetop mac and cheese?
It pairs well with grilled chicken, barbecue, hot dogs, vegetables, or a simple salad.
Is this a good recipe for beginner cooks?
Yes. Since there is no roux to make, this recipe is simple and a great option for beginner cooks or kids learning in the kitchen.
Tips and Tricks
- Use freshly shredded cheese. It melts better and helps create a smoother, creamier sauce.
- Do not overcook the pasta. Cook the pasta just until tender so it holds up well when mixed into the cheese sauce.
- Keep the heat low. Low heat helps the cheeses melt gently, keeping the sauce smooth rather than turning grainy.
- Add the liquid gradually. Pouring in the milk or half-and-half a little at a time makes it easier to control the texture.
- Stir patiently. It can take a few minutes for everything to fully melt and come together, so keep stirring until the sauce is creamy.
- Serve it right away. This stovetop mac and cheese is at its creamiest and best when served fresh.
