Easy Fluffy Dinner Rolls

by Laura

I made these easy fluffy dinner rolls a bit ago (I’ve actually made them several times since) and was planning on sharing them soon, but then I thought how perfect they would be for Easter! So I just had to share them today in time for your Easter menu plan. These homemade rolls are the closest thing I have found to those fluffy dinner rolls from the bakery and in my opinion, they taste much better.

The method to making these is what makes them quick to make. They are ready in just a  little over 1 hour. The dough is covered with plastic wrap to trap the heat and help proof it. Then the rolls rise in a warm oven to speed things along.

I have never really been good at shaping round rolls until I learned this way to shape them from one of my blogging friends – Mel over at Mel’s Kitchen Cafe. However, if you want to shape them in more fancy shapes then check out my post I did a while back at shaping rolls!

Easy Fluffy Dinner Rolls

Ingredients

Instructions

  1. Preheat your oven to 170 degrees or warm (depending on your oven temperature).
  2. Grease a 9 x 13 baking dish with a little butter, set aside.
  3. In a microwave safe bowl, add the milk and butter. Microwave for about 1 1/2 minutes. Watch this while in the microwave. You don’t want to milk to boil. You just want it to warm the milk and melt the butter.
  4. Add the hot butter/milk mixture along with the hot water to the bowl of a kitchen aid mixer.
  5. Add the sugar, salt and 2 cups of the flour to the bowl and mix for 1 minute using the dough hook. Mix for 1 minute.
  6. Add the yeast along with 1 cup of the flour to the bowl. Mix until combined.
  7. Add the remaining 1-1/2 cups of flour to the dough. You have enough flour when the sides of the bowl are clean. Then mix for 5 minutes.
  8. Remove the dough hook and remove the bowl from the mixer. Cover the bowl with plastic wrap and let sit for 5 minutes. The plastic wrap to trap the heat and help proof the dough.
  9. Spray your work area with non-stick cooking spray. Divide the dough into 12 equal pieces and roll into balls. I use this method to shape my round rolls.
  10. Place dough balls into the prepared 9 x 13 pan.
  11. Place the pan into the preheated 170 degree oven. Let them rise in the oven for about 20 minutes until the tops of the rolls are about even with the sides of the 9 x 13 dish.
  12. Turn the heat up to 350 degrees while allowing the rolls to remain in the oven. Bake for 15 minutes or until golden brown. The rolls cook while the oven preheats to 350 and finishes in the 15. No need to preheat and then cook 15 minutes.
  13. Brush the tops of the rolls with a little butter and serve. Makes 1 dozen rolls.

Could this recipe Easy Fluffy Dinner Rolls be made in a bread machine instead of the kitchen mixer as stated just using the dough cycle and then remove and let rise like the recipe states. Please advise. Thanks
