You know I try and help you get in and out of the kitchen as quickly as possible. I have another great quick main dish for you. This dijon mustard grilled chicken gets coated in a simple marinade and then cooked on the grill.
Simple and easy yet flavorful chicken that is ready in no time. You just need to give it some time in the marinade and the longer the better!
This was another recipe I made when my son was recently on an elimination diet for medical reason. He was not allowed to eat eggs, dairy, soy, gluten, seafood, and tree nuts. Let me just say, that’s a hard diet, but this chicken recipe worked perfectly for it.
- 1/3 cup Dijon mustard
- 2 Tbsp red wine vinegar
- 1/4 cup canola oil
- 1/2 – 1 tsp ground cayenne pepper, optional
- 5–6 chicken breasts
- Add Dijon mustard, vinegar, oil, and cayenne if desired into a gallon sized zip-loc bag.
- Add chicken to the bag and place in the fridge to marinate. Marinate for 30 minutes or ideally for 4-8 hours.
- Grill chicken until fully cooked. Serves 5-6.
