Now that we’ve got Christmas Dinner sorted, it’s time to shift our focus to breakfast ideas for Christmas morning, including a special treat: Christmas Morning Pie. As a huge breakfast enthusiast, I believe a hearty breakfast or brunch can keep you satisfied until dinner.

Today’s feature is a delicious breakfast pie adapted from a recipe I discovered on allrecipes.com. This Christmas Morning Pie is adorned with green and red peppers in the quiche filling, giving it a festive, holiday look. It’s incredibly easy to make and absolutely tasty. For a twist, I added sliced mushrooms to half of one of the pies—because mushrooms and eggs are a match made in heaven. While that section might not look as Christmasy, it certainly was delicious.

You can prep in advance by cooking the sausage and chopping the peppers the night before, then simply assemble and bake the pie in the morning. Today, I’ll also be sharing my top egg dishes with you. I tried to narrow it down to my top 10 favorites, but I ended up with 11 because they are all just too good! You can see the list below.

  • SWISS CHEESE

  • STORE-BOUGHT UNBAKED FROZEN PIE SHELL
  • EGGS
  • MILK
  • ONION
  • SWEET RED BELL PEPPER
  • GREEN BELL PEPPER

Cook the Onion and Sausage: In a skillet over medium heat, cook the diced onion and sausage until the sausage is fully cooked and the onion is tender.

Prepare the Sausage Mixture: Drain any excess grease from the pan. Mix the cooked sausage and onion with the shredded cheese.

Assemble the Pies: Divide the sausage mixture evenly between two frozen pastry shells, placing half of the mixture in each shell.

Add the Peppers: In a bowl, combine the chopped green and red peppers. Sprinkle half of this pepper mixture evenly over each pie.

Mix the Eggs and Milk: In a large bowl, whisk together the eggs and milk. Pour half of this egg mixture over each pie, ensuring it’s evenly distributed.

Bake the Pies: Preheat your oven to 350°F (175°C). Bake the pies for 55-60 minutes, or until a knife inserted near the center of each pie comes out clean.

Let the Pies Stand: Remove the pies from the oven and let them stand for 5 minutes before cutting. This helps the filling to set and makes slicing easier.

  • Ham and Cheese Omelet Roll – a fun way to serve up an omelet to 12 people without all the work.  Plus it looks amazing.
  • Brunch Pizza Squares – a fun and yummy breakfast pizza.
  • Baked Swiss and Sausage Omelet – another easy way to make an omelet for several people.
  • Breakfast Casserole – like a strata and made with sausage.
  • Baked Oven Omelet – like the breakfast casserole above but made with ham.  This one is a family recipe from my mom.
  • Hash Brown Quiche – a yummy version of a quiche made with hash browns as the base.

Ingredients
  

  • 12 oz pork sausage with sage (I used Jimmy Dean)
  • 1 cup Swiss cheese shredded
  • 1 cup Cheddar cheese shredded
  • 2 unbaked frozen pie crust 9 inch
  • 6 eggs lightly beaten
  • 1 cup milk
  • cup onion chopped
  • cup sweet red pepper chopped
  • cup green pepper chopped

Instructions
 

  • Cook onion and sausage in a skillet until sausage is fully cooked.
  • Drain sausage and mix in cheese.
  • Place half of mixture in each frozen pastry shell.
  • Combine peppers in a bowl. Sprinkle half on the mixture evenly over each pie.
  • Combine eggs and milk together. Pour half of the mixture over each pie.
  • Bake at 350 degrees F for 55-60 minutes or until a knife inserted near the center comes out clean.
  • Let stand 5 minutes before cutting. Makes 2 pies.

    10 cups of cubed thick white bread
    8oz. block of low-fat cream cheese, softened
    1 1/2 cups low-fat milk
    2/3 cup half n half
    1/2 cup pure maple syrup
    1/2 tsp vanilla extract
    1/2 tsp almond extract
    1/2 tsp cinnamon
    2 tbs powdered sugar
    3/4 cup pure maple syrup
    place bread cubes in a 13 x 9 casserole dish after spraying with cooking spray. Beat cream cheese until smooth, then add the eggs, milk, half n half, 1/2 cup syrup, vanilla, almond and cinnamon…mix until smooth. Pour mixture over top of bread and cover. Keep in fridge overnight.
    The next morning, take out of fridge and sit at room temperature for 30 min. Bake at 375 for 50 min or until set. Sprinkle with powdered sugar and serve w/ syrup.
