Cheeseburger Quesadillas with dipping sauce

For today’s recipe, I took my healthy big mac salad recipe and converted it into cheeseburger quesadillas with dipping sauce. Basically I took the lettuce and swapped it for a tortilla!

This is a tasty variation. It starts with that famous sauce. Instead of using for a dressing, it becomes the perfect dipping sauce for the cheeseburger quesadillas. It’s made from mayo, dill pickle relish, ketchup, mustard, garlic powder, onion powder, and a little vinegar. Mix that all together and place it in the refrigerator while you prepare the quesadillas.

Now, the next step is the beef for the quesadillas. Cook the ground beef in a skillet with some onion until fully browned. Once that is cooked, drain off any excess grease. Then mix in some salic powder, salt and pepper. Cook for a few minutes to get those spices combined with the meat.

Next, it’s time to make the quesadillas. Start with some butter melted in the skillet. Place one of the tortillas in there. Top the tortilla with a layer of the cheese followed with a layer of the beef. Finish it off with another tortilla. Cook until it’s nice and golden, then flip. Finish with this process until all the quesadillas are made. Cut each quesadilla into 4 wedges and serve with the dipping sauce.

Ingredients
  

  • ½ cup light mayonnaise
  • 2 Tbsp dill relish
  • 1 Tbsp ketchup
  • 1 tsp mustard
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 1 tsp white vinegar
  • 1 lb 95% lean ground beef
  • ¼ yellow onion chopped
  • ¼ tsp garlic salt
  • ¼ tsp salt
  • pinch of pepper
  • 2 Tbsp butter for the pan
  • 8 fajita sized flour tortillas
  • 3 ½ cups grated sharp cheddar cheese

Instructions
 

  • Make the dipping sauce by combining mayonnaise, dill relish, ketchup, mustard, garlic powder, onion powder, and vinegar together. Place in the refrigerator while you make the quesadillas.
  • For the quesadillas, brown the ground beef in a skillet along with the onion. Cook until beef is fully cooked and drain off any excess grease.
  • In a skillet, melt 1/2 Tbsp of butter. Place 1 tortilla in the pan. Top with a layer of 1/4 of the cheese followed with a layer of 1/4 of the ground beef. Then top with another tortilla (buttered side out).
  • Cook for a few minutes until the one side is browned and then flip, cooking until that side is browned and the cheese is melted. Repeat the same process with the remaining ingredients.
  • Cut each quesadilla into 4 wedges with a pizza cutter and serve with the dipping sauces. Serves 4.
