Blueberry and Feta Salad with Poppyseed Dressing

I love blueberries. They are one of my favorite fruits, so I was happy when the Blueberry Council asked me to share a post involving blueberries. They call blueberries “little blue dynamos”. Blueberries are a welcomed ingredient in today’s recipe for Blueberry and Feta Salad with Poppyseed Dressing.

Biggest Loser Host Alison Sweeney has also partnered with the Blueberry Council this year to get the word out about how blueberries help make healthy living easy and fun.

I even got to ask Alison a few questions.

RMK: What is your most interesting way to incorporate blueberries into your diet?

Alison: Blueberries on pizza! It’s unique but really delicious – my kids love it!

RMK:  What is your favorite way to enjoy blueberries?

Alison: My hands-down, favorite way to fuel up for the day is with oatmeal + blueberries + agave nectar + cinnamon. Sticking with a dish you know the nutritional facts of is a good way to stay on track — with blueberries, I know there are only 80 calories in a cup, plus I’m getting fiber, vitamin C, and an energy boost!

RMK: How do you balance being a mom with a career?

Alison: It’s no easy job! As every busy mom knows, it’s about taking it one day at a time. Always remember to start with #1. Don’t lose yourself as you try to balance the various responsibilities in your life. Make it a priority to take care of yourself.

I loved her answers and liked the idea of blueberries on pizza! Something I am definitely gonna try out. I also like blueberries and oatmeal just like Alison. I enjoy them in this blueberry walnut baked oatmeal or tossed on top of a bowl of overnight slow cooker oatmeal.

My next favorite way to enjoy blueberries is in a salad. I created this simple blueberry and feta salad with poppyseed dressing to share with you today. It makes a quick summer side dish. You can also top it with some grilled chicken for a main dish salad.  I also love this Red, White, and Blue Summer Salad or Triple Berry Salad too. Blueberry and Feta Salad with Poppyseed Dressing

Ingredients
  

  • ½ cup sugar
  • ¼ cup red wine vinegar
  • ½ tsp. dry mustard
  • ¾ tsp. salt
  • ¼ cup chopped red onion
  • 1 cup canola oil
  • 2 tsp. Poppyseeds

Salad:

  • 1 10 oz bag hearts of romaine salad mix
  • ½ cup almonds
  • 1 cup blueberries
  • 2 oz. crumbled feta cheese

Instructions
 

  • Place sugar, vinegar, dry mustard, salt, and onion in blender. Turn on blender and through opening in blender lid slowly add 1 cup canola while blending. Blend until onion is all chopped into dressing and is well blended with the oil. Add poppyseeds and pulse just to mix them in.
  • Combine salad ingredients and pour desired amount of salad dressing over. Toss to coat. Serves 8.
