The end of 2022 is getting even closer and today it’s the best sides of 2022. There is a veggie dish, two potato dishes, and one fruit salad.
The first of the best sides of 2022 if a form of a baked potato. This recipe is for easy scored potatoes. You score potato halves and place them on a baking sheet lined with foil. Then you will brush all of the potatoes with some butter. This will add flavor and make the seasonings stick to them. The seasoning you use is a combination of paprika, parsley, salt, and pepper.
Second is my favorite recipe of them all. It’s for oven roasted squash. This was a creation of my own. The focus of this dish is squash. However, I add in some mushrooms, red bell pepper, and red onion for flavor and variation in texture. You toss the veggies with a little olive oil and Kinder’s Buttery Steakhouse seasoning combination. It is delish! I even eat it as my meal!
Third is a creamy pina colada salad. The base of the salad is yogurt, cool whip, and instant pudding mix. It has pineapple and bananas along with toasted coconut. It’s a creamy salad version of that tropical fruity drink.
Last is a healthy version or mashed potatoes made in the Instant Pot. To make them healthier but just as tasty, I used a lower fat buttery spread along with fat free plain Greek yogurt and skim milk. This recipe for these healthy mashed potatoes is only 5 points for me on my WW personal points. My regular Instant Pot mashed potato recipe would be 23 points for 1/6 of the recipe in WW points.
