As 2022 draws to a close, it’s time to celebrate the best side dishes of the year. This selection includes a delicious veggie dish, two variations of potato dishes, and a delightful fruit salad.
First up is a unique take on baked potatoes—easy scored potatoes.
In this recipe, you’ll begin by scoring the potato halves, making shallow cuts in a crisscross pattern across the surface. This technique not only allows the potatoes to cook evenly but also ensures they soak up all the delicious flavors. Place the scored potatoes on a foil-lined baking sheet for easy cleanup.

Next, brush the potatoes generously with melted butter, which not only enhances their flavor but also helps the seasoning adhere better. The seasoning blend is a simple yet effective combination of paprika, parsley, salt, and pepper. This mix adds a perfect balance of spice, herbiness, and savory notes, transforming the potatoes into a mouthwatering side dish. The end result is a flavorful and visually appealing dish that pairs well with any main course and is sure to be a hit at your dining table.
Second on the list is my personal favorite, oven-roasted squash.
This recipe is my own creation, with squash as the star ingredient. To add flavor and a variety of textures, I include mushrooms, red bell peppers, and red onions. Tossing the veggies in a bit of olive oil and Kinder’s Buttery Steakhouse seasoning results in a delectable dish. It’s so tasty, I often eat it as a meal on its own!
Next, is a creamy pina colada salad.
The base of this tropical-inspired salad consists of yogurt, Cool Whip, and instant pudding mix. It’s filled with juicy pineapple, bananas, and toasted coconut, creating a creamy salad that captures the essence of a pina colada drink. This dish is refreshing and perfect for any occasion.
Lastly, there’s a healthy version of mashed potatoes made in the Instant Pot.
To keep this dish both nutritious and flavorful, I use a lower-fat buttery spread, fat-free plain Greek yogurt, and skim milk. This recipe comes to only 5 points on my WW personal points, compared to the 23 points for my regular Instant Pot mashed potato recipe. These healthier mashed potatoes are a guilt-free way to enjoy a classic comfort food.
