First is this beef taco casserole.  It’s a fun way to change up your taco night. This beef taco casserole has some extras ingredients included that you don’t normally have in a regular taco. You have the extra additions of corn, green chilies, rice, and enchilada sauce. Once it is fully cooked, you cut it into squares and top with those fresh taco toppings like lettuce, tomato, and sour cream. Use whatever are your favorite toppings to top these squares of beef taco casserole.

Next is this mushroom florentine pasta.  I love mushrooms. They are one of my favorite vegetables. Plus, they are especially delicious if it includes pasta in a creamy sauce. That is exactly what this mushroom florentine pasta is. This recipe uses gruyere cheese. If you can’t get your hands on some gruyere, some gouda will work as a substitution. these cheese just ups the flavor to the sauce.

Our third best main dish of 2021 is an easy roasted pork tenderloin.

My favorite cut of pork is the tenderloin. It always turns out perfectly tender and juicy. I honestly think it’s hard to mess up cooking a tenderloin. This pork tenderloin is so easy to make. You just need a few spices along with some olive oil. You brush the olive oil over the pork tenderloin. This makes it possible for the seasonings to stick to the pork.

We finish the best main dishes of 2021 with famous chicken and potato bowls. This is a copy cat version of Kentucky Fried Chicken (AKA KFC) famous bowls. Personally, I think this homemade version of the famous chicken and potato bowls is so much better. Breaded chicken bites for popcorn chicken is what you can use. I love to use the frozen Memeber’s Mark Southern chicken bites from Sam’s Club. To me, they taste just like the chicken nuggets from Chick-fil-a.
