I saw this recipe for Apple Cider Doughnuts on Tastespotting and had to give them a try. The recipe was shared by A Bowl of Mush. I have never made cake type doughnuts before. I have only made the raised version, so this was all new for me. The dough to me looked just like sugar cookie dough. I didn’t make doughnut holes. I added them to the scraps when I re-rolled the dough. The original recipe said it makes 12 doughnuts, but I got more like 17. These were tasty, but I was hoping you could taste the apple. I really couldn’t taste the apple at all. However, they were still yummy. They tasted very similar to the recipe I have talked about before for French Breakfast Puffs.

We made these tonight as a family (my only adjustments were adding 1/2 cup more flour until the dough seemed more like it would roll out and I used a packet of apple cider flavored drink mix with one cup water and simmered that down to 1/4 cup.
We loved these! This made so many doughnuts that we called our neighbors and invited them over impromptu to help us eat them! These are dangerous to have around!

You can get the apple taste back by mixing some instant cider powder with your dusting sugar.

I'm thinking that you could probably use frozen apple juice concentrate, thawed, instead of the cider and boil that down. Or, maybe omit the spices and use either all apple butter or half apple butter with half of the condensed cider. I've seen this recipe before, and I couldn't imagine that it could be very apple-y flavored either.

I thought about using applesauce too, but was too scared since it was my first time to do cake doughnuts. I would worry about what the applesauce may do to the dough. It is very tender. I am on the look out to see what other people do with this recipes. I'll update if anything comes up. This is more like a spice doughnut flavor in my opinion.
