Boo Berry Brownie Bites and Scaredy Cat Brownies

This month, I was asked by General Mills along with several other bloggers to create some fun Halloween Treats using some of General Mills cereals.  I had in mind one specific idea.  However, it involved finding a box on Boo Berry Cereal.  Not an easy task in September.  I did manage to wrangle a box from a Target store yesterday.  However, the boxes should be hitting the shelves any day now for you to make up some of these Boo Berry Brownie Bites.

I mixed some of the marshmallows from the cereal into the brownie batter.  This helped make the brownie even better.  It made the brownie more ooey and gooey, two things that a brownie must be.  I also baked the brownies in mini muffin tins to get that fun bite size.  Finally, I topped off the Boo Berry Brownie Bites with Betty Crocker’s fluffy white frosting along with sprinkles and the boo berry cereal.

I also created a scaredy cat brownie using a regular muffin tin to bake the brownies in.  These babies then get a topping with Betty Crocker’s chocolate frosting.  You make the cute cat face using some Trix to make the eyes. Then I had Golden Grahams for the ears, pretzel sticks for whiskers, and red frosting for a nose and mouth. I hope these treats help make your Halloween celebrations even more fun.

Boo Berry Brownie Bites

Ingredients
  

  • 1 18.3 oz package Betty Crocker Fudge Brownie mix
  • ¼ cup water
  • cup vegetable oil
  • 3 eggs
  • 1 container Betty Crocker Fluffy White frosting
  • Boo Berry Cereal
  • orange sugar sprinkles optional

Instructions
 

  • In a bowl, stir together brownie mix, water, eggs, and oil until blended.  Mix in 1/2 cup of marshmallows from the Boo Berry Cereal.
  • Spoon brownie batter into mini muffin tins that have been greased or lined with paper liners.  Fill mini muffin tins half way with brownie batter.  You will get about 32 mini brownie bites.
  • Bake at 350 degrees for 12-15 minutes or until a toothpick inserted in to the brownie comes out almost clean.  Allow brownies to cool and remove from pan.  If using liners, remove liners from brownies.
  • Fill a 1 quart freezer bag with fluffy white frosting.  Cut a small portion off the corner of the freezer bag with scissors.  Then pipe frosting on brownie bites using the freezer bag.
  • Sprinkle brownie bites with orange sprinkles if desired.  Place a piece of Boo Berry Cereal in the center of each brownie bite just before serving.

Scaredy Cat Brownies

Ingredients
  

  • 1 18.3 oz package Betty Crocker Fudge Brownie mix
  • ¼ cup water
  • cup vegetable oil
  • 3 eggs
  • 1 container Betty Crocker chocolate frosting
  • red decorating gel
  • Golden Graham Cereal
  • Trix Cereal
  • pretzel sticks

Instructions
 

  • In a bowl, stir together brownie mix, water, eggs, and oil until blended.  Divide brownie batter into a 12 count muffin tin that have been greased or lined with paper liners.
  • Bake at 350 degrees for 18-22 minutes or until a toothpick inserted in to the brownie comes out almost clean.  Allow brownies to cool and remove from pan.  If using liners, remove liners from brownies.
  • Frost brownie tops with chocolate frosting.  Place two pieces of Golden Grahams in each brownie creating the cat's ears.  The use Trix cereal to make the cat's eyes.  Break pretzel sticks in half and use to make the cat's whiskers.  Then use the red decorating gel to create the cat's nose and mouth.
