30ozwhite beansrinsed and drained (two 15 oz cans)
4ozcream cheese softened and cubed
1cupfrozen corn
4oz canmild green chiles
14oz canmild green enchilada sauce
1tsponion powder
1tspgarlic powder
1tspchili powder
½tspsalt
4cupschicken broth
Toppings
cheddar cheeseshredded
avocadodiced
tomaotesdiced
sour cream
fresh cilantrochopped
tortilla stripsor crushed tortilla chips
Instructions
Add all of the above soup ingredients into a stock pot. Bring to a boil and allow to simmer for 10 minutes or until the cream cheese is meltd and combined.
Serve in bowls and top with desired toppings. Serves 6-8.
Notes
This can be mixed in a slow cooker and cooked on high for 2-3 hours.
