These Slow Cooker Queso Chicken Tacos are the ultimate easy weeknight meal, transforming simple chicken into an incredibly rich and creamy filling with almost zero effort. The chicken is slowly cooked in a flavorful bath of taco seasoning, Ro*tel, and chiles, then shredded and fully coated with velvety, melted jarred queso. Add chicken in single layer to the slow cooker. Sprinkle chicken evenly with taco seasoning. Add in the Rotel, green chiles and chicken broth.
Cover and cook on low for 6 to 8 hours, or on high for 4 to 6 hours.
Remove excess liquid from the slow cooker leaving just a little behind. Shred chicken using two forks. Add in the queso and gently mix with chicken, coating chicken evenly. Cover and cook on low for 20 minutes or until heated through. Serve with tortillas and your favorite taco toppings.
Notes
Make this a freezer meal - add the chicken, taco seasoning, Rotel, and chicken broth to a gallon sized freeze bag and freeze. To cook, run the back under some cold water to loosen it from the freezer bag and add it to the crock pot. Proceed with step 2 in the instructions. Since this is frozen it will need to cook for the longer amount of time listed.
