In a large skillet, brown the pork chops in the oil. Do this in batches if needed.
Mix the remaining ingredients in a bowl until combined. Pour over all the chops in the skillet and bring to a boil.
Reduce to a simmer and allow to simmer for 4-5 minutes until internal temp is 145 degree. Remove from heat and let sit for 5 minutes before serving. Serves 6.
Notes
To freeze - After browning cops, place in a freezer container and cover with sauce mixture. Thaw partially in fridge overnight and heat in a skillet until fully warmed.
