Open package of cinnamon rolls. Take 2 rolls and unroll them. Take off about 1 inch of dough from both rolls and set aside. These will be used to make the stem.
On a baking sheet, shape one of the unrolled cinnamon rolls into 2 of the clover leaves for the shamrock. Do the same with the second roll placing it next to the first rolls making the for leaves of the shamrock.
The put together the 2 inch pieces you broke off adding it to the shamrock leaves making a stem.
repeat with the remaining dough. You will end up with 4 shamrock cinnamon rolls.
Bake in the oven for about 10 minutes until golden brown.
While the rolls bake, add the icing to a bowl and mix with the food coloring to make a green frosting.
Place frosting into a quart sized freezer back and set aside.
Remove rolls from oven and allow to cool for a few minutes.
Take bag of icing and snip off a corner of the bag creating a small hole to pipe the frosting on the rolls. Pipe frosting on rolls and sprinkle with green sugar sprinkles if desired. Makes 4 shamrock shaped rolls.
