Preheat oven to 375 degrees. Cover a roasting pan with aluminum foil. Then lightly spray the foil with nonstick cooking spray.
Place roast onto prepared pan and season well with salt and pepper.
In a small bowl, whisk the dijon mustard, maple syrup, and rosemary together. Pour half of this mixture onto the roast.
Bake at 375 degrees for 1 to 1 1/2 hours or until meat reaches an internal temperature of 145 degrees. If during the cooking process the roast gets too brown, just tent with a piece of foil.
