6medium red or yukon gold potatoescut into 1 inch cubes
¼cupbuttercut into 4 pieces
1 to 2tablespoonsminced fresh parsleyyou can use dried in it's place but fresh has better flavor
Salt and pepper to taste
Instructions
In a large saucepan, add potatoes along with enough water to cover the potatoes. Bring to a boil over medium heat. Reduce heat to simmer and cover. Cook 20 minutes or until potatoes are fork tender. Drain.
Add butter, parsley, salt and pepper to the potatoes and stir until butter is completely melted. Makes 6 servings.
