In a large bowl, whisk together 2 cups of flour with the remaining ingredients.
Then whisk in the remaining 4 cups of flour until well blended.
Mix will make 3 batches. Each batch makes 12 pancakes. Mix will keep for 3 months.

To make pancakes: 2 eggs, separated 2 cups of buttermilk 4 Tbsp melted butter 2 cups pancake mix canola oilIn a large bowl, whisk together egg whites and buttermilk. In a small bowl, whisk egg yolks while slowly added to butter to the yolks. Add the yolk mixture to the buttermilk mixture and whisk to combine. Add pancake mix to the wet mixture and whisk just until combined. The batter will be lumpy. Add 1/3 cup batter to hot griddle greased lightly with canola oil. Gently spread batter if needed. Cook util bubbles begin to set around the edges and underside is golden. Flip and cook other side until golden.
