This Instant Pot Beef Nacho Casserole is a quick and hearty meal made with seasoned ground beef, rice, tomatoes, corn, green chiles, and cheddar cheese. Crushed Nacho Cheese Doritos add a fun, crunchy finish, while sour cream and fresh toppings make every serving even better. This easy, family-friendly dinner comes together in about 30 minutes.

Instructions
Turn the Instant Pot to the sauté setting. Add the ground beef, onion, and taco seasoning. Cook, breaking up the beef, for about 5 minutes, until cooked through. Add in the broth and scrape the bottom of the pot. Turn off the Instant Pot.
Sprinkle in the rice. Top the rice with the tomatoes, corn, and green chilies. Do not stir.
Secure the Instant Pot lid. Make sure the valve is set to sealing. Set the manual cook for 5 minutes. When the time is up, allow the pressure to release naturally for 10 minutes. Then manually release any remaining pressure. Stir together.
To serve: Sprinkle each serving with shredded cheese and crushed Dorito chips. Top with any of the additional toppings. Serves 4-6.
