Instructions
In a large bowl, mix the mayonnaise, cilantro, green onions, celery, carrots, and sour cream together.
Add chicken to the mixture and stir to coat. Season with salt and pepper to taste.
Arrange chicken salad in the center third of your tortilla, right in the middle. Sprinkle some of the cheese on top.
Roll up burrito style by folding in the sides, then rolling it up tightly from the bottom. Place seam side down until you are finished rolling them all up.
Place each wrap in a preheated panini press until both sides and crispy and golden brown.
Next, grab each rolled tortilla. Coat with cooking spray and sprinkle with a little salt and pepper. Repeat this process until all of your wraps are browned and crisped.
