Easy Blueberry Waffles

Ingredients

  • 2 cups all-purpose flour
  • ½ cup cornstarch
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 2 Tbsp sugar
  • 1 ½ cups fresh blueberries
  • 2 cups buttermilk
  • ⅔ cup vegetable oil
  • 2 large eggs lightly beaten
  • 2 tsp vanilla extract

Instructions

  • In a medium mixing bowl, combine the flour, cornstarch, baking powder, baking soda, salt and sugar.  Whisk together to blend.
  • Add in the buttermilk, oil, eggs and vanilla. Mix just until incorporated and few lumps remain.
  • Preheat a waffle iron.  Fill waffle wells and cook according to the manufacturer’s instructions.  Cook until crisp and golden.  I got 5 waffle for my waffle maker.
