1 cup peanut butter smooth or crunchy
¼ cup butter at room temperature
1 cup powdered sugar
½ cup crispy rice cereal
2 cups chocolate chips I use semi-sweet
1 Tbsp shortening

Instructions

In a large bowl, beat together peanut butter and softened butter until creamy. Gradually add sugar and mix until smooth.
Stir in crispy rice cereal.
Scoop mixture into 1-inch balls and place on a lined cookie sheet. Chill in the refrigerator for at least 30 minutes.
Melt chocolate chips and shortening in the microwave, stirring every 30 seconds until smooth.
Dip chilled balls into melted chocolate and place back on the lined baking sheet. Allow to set before serving.
