1lg. loaf French breadsliced thick (about 12-13 slices) or 1 loaf Texas toast
For the coconut syrup:
½cupbutter
¾cupbuttermilk
1cupsugar
½tspbaking soda
1tspcoconut extract
Instructions
For the French toast: In blender, combine eggs, milk, salt, vanilla, and flour. Blend until mixture is lump-free. Transfer to a shallow bowl.
Quickly dip single pieces of bread into the batter, flipping to coat both sides. Place immediately on a hot skillet. Flip when browned and brown the other side. Top with hte coconut syrup.
To make the syrup: In a saucepan, add the butter, buttermilk, and sugar to a boil.
Allow to boil for 1 minute while stirring constantly. Remove from heat and stir in the baking soda and vanilla. Be careful because the baking soda will cause the mixture to bubble up. Stir until combined.
