Preheat oven to 350 degrees. Line 12 muffin cups with paper liners.
In a large bowl, whisk together the sugars, eggs, oil, vanilla and applesauce.
In a separate bowl, whisk together the flour, baking powder, soda, salt and spices.
Add the dry ingredients into the wet ingredients and stir to combine. Fold in the oats, apples, and nuts.
Divide batter between the muffin cups. The cups will be full. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted in the center comes out clean.
