Summer Squash Medley

Another thing that I always enjoy every summer during August is zucchini, just like in this summer squash medley. It is my favorite summer vegetable.

Since it is my favorite summer vegetable, I am always looking for ways to enjoy it. I have a good archive of 50 recipes for zucchini if you want to peruse them. It’s a good collection and all of them are delicious.

I have another delicious recipe today to add to that collection. It is a perfect side dish, or I even eat it as my meal for lunch. If I eat it as a meal, it serves 2, but as a side dish it serves 6.

It also incorporates one of my favorite seasoning mixes – McCormick Montreal Steak Seasoning. If there is one seasoning mix to have, this would be it. It great for steak but can be used for more than that. I have 12 recipes that I use it in including potatoes, soup, and burgers.

The seasoning is amazing in this vegetable mix. I love to use a generous amount, but if you are worried use the smaller amount to begin with. You can always add more later if needed.

Summer Squash Medley


    Ingredients

    Scale
    • 2 Tbsp butter or olive oil
    • 2 zucchini, diced
    • 1 summer squash, diced
    • ¼ cup diced red onion
    • 1 diced red bell pepper
    • ½1 Tbsp McCormick Montreal Steak Seasoning

    Instructions

    1. Add oil or butter to a large skillet over medium heat Add in all the vegetables.
    2. Cook over medium heat until squash is tender.
    3. After cooker, mix in steak seasoning and serve. Serves 6.
