Pumpkin Spice Pancake Poppers

Do you regularly enjoy a nice hot breakfast together as a family on the weekend? I have teamed up with Hungry Jack® to help bring back weekend breakfast. Personally, I think we should celebrate weekend breakfast!

I use to love waking up on the weekend to the smell of something yummy cooking in the kitchen. Now, I am the one who gets to get that yummy smell going for my family to wake up to.

Weekend breakfast is one of those great opportunities to spend time together and you can take it beyond the eating and even get the whole family helping with the cooking.

Why not use your weekend breakfast as a time to celebrate? You can celebrate the season with seasonal flavors. Fall and winter have such tasty seasonal flavors. Hungry Jack has made this easy with their pumpkin spice and cinnamon spice pancake mix. (I have tried both and love both) Plus, the mix can be used to make more than just pancakes. I used the pumpkin spice mix to make some delicious pumpkin spice pancake poppers.  You can also use the mix for more than breakfast. Like in these cinnamon raisin bar cookies or easy pumpkin rolls.

You can also use weekend breakfast to celebrate the accomplishments your family has had throughout the week. Celebrate your son working hard and acing that chemistry test or you daughter perfecting that dance move that has troubled her for weeks. Hungry Jack Funfetti pancake mix would be great to use for this.

I also love just celebrating being a family as part of our weekend breakfast.

We like to each take a turning “bragging” about someone while we eat our meal together.

Pumpkin Spice Pancake Poppers


Ingredients

Scale
  • Crisco® Pure Vegetable Oil
  • 1 1/2 cups Hungry Jack® Complete Pumpkin Spice Pancake & Waffle Mix
  • 3/4 cup light sour cream
  • 1 Tbsp water
  • Hungry Jack® Original Syrup or cinnamon sugar

Instructions

  1. HEAT 1-inch of oil in large saucepan over medium-high heat to 330°F. Reduce heat to maintain oil temperature between 330-340°F.
  2. COMBINE pancake mix, sour cream and water in small bowl.
  3. Drop 4 or 5 small scoops (about 1 teaspoon) of batter into hot oil. Cook 1 minute, turning several times, or until poppers are golden brown. Remove with slotted spoon. Drain on tray lined with paper towels. Repeat with remaining batter.
  4. SERVE with syrup or rolled in cinnamon sugar.
