Today is the last recipe from my “in a mug” week. Many of you have learned by now that when I do these themed weeks, I always save the best recipe for last. I have enjoyed this cake at least 6 times. This recipe is so easy.
The mix is made from 2 ingredients – a lemon cake mix and an angel food cake mix. Then all you need to do to make the cake is add some water to the mix. This also makes the cake a little healthier than regular cake that also needs oil and eggs.
Now, I did make this a lemon version by using a lemon cake mix, but the possibilities are endless. You can use any flavor of cake mix you want in place of the lemon – white, chocolate, vanilla, strawberry, etc. This mix also makes a cake that is more cake like thanks to the angel food cake mix. You do need to be careful again with over cooking, it will end up chewy if you do.
I served mine up with a little whipped cream and fresh raspberries and loved that combination. However, it isn’t necessary but I do highly recommend it. Just keep this mix in an air tight container and you can have a little cake any time you have a craving.
This would also make a cute gift, especially for birthdays. Just give them a mug filled with the mix and the instructions on how to make a cake! You could even make a simple powdered sugar glaze to put on top if you want.Print
- 1 box angel food cake mix
- 1 box lemon cake mix
To make the cake: Add 2 Tbsp of water to the bottom of a mug. Then add 3 Tbsp of the cake mix. Mix together with a knife. Place mug in the microwave and cook for 45 sec to 1 min. Eat the cake hot from the microwave or allow to cool and serve with fresh raspberries and sweetened whipped cream (that is the way I like it).
