Italian Chicken Marinade (Freezer Meal)

This week I am sharing a full lineup of grilling recipes, starting with a flavorful Italian Chicken Marinade. A good marinade is such an easy way to add big flavor to chicken, especially during the summer when grilling is in regular rotation. This one is a great recipe to have on hand because it is simple, delicious, and works perfectly for busy weeknights.
One of the best things about these marinade recipes is that they also work really well for meal prep. You can add each marinade to a gallon-size freezer bag, then place the chicken right in the bag with it. Once the chicken is coated, press out any extra air, seal the bag, and place it in the freezer.

This is one of my favorite ways to do freezer meals in the summer. Instead of filling the freezer with heavy casseroles, you can prep flavorful grilled meats that feel lighter and fit the season so much better. It is also a great method for other marinade recipes you already love. If you have a favorite marinade, you can use the same freezer-bag process to make dinner easier later. It works just the same with beef and pork recipes, too.
Then, the night before you want to make it, just take the bag out of the freezer and place it on a dish in the refrigerator to thaw. As the chicken thaws, it also marinates, so you are doing two steps at once with no extra work. By the next day, the chicken is full of flavor and ready to go on the grill for an easy dinner.
Formula for a Good Marinade
A good marinade usually includes five key elements: oil, acid, salt, sweetness, and aromatics or seasonings. The oil helps coat the meat and carry all of the other flavors. I usually reach for olive oil or canola oil when making marinades, but other neutral oils can work well too.
Next comes the acid. This is what adds brightness and can help tenderize the meat a bit. Common options include citrus juice, vinegar, yogurt, buttermilk, or even soda like Sprite or Coke.
Salt is another important part because it helps bring out flavor. That does not always have to come from plain salt either. Ingredients like soy sauce, Worcestershire sauce, or Dijon mustard can also add that salty element while bringing in extra flavor at the same time.
A little sweetness helps balance the acid and can also help the meat brown nicely when it cooks. Honey, brown sugar, and maple syrup are all great options. That said, sweetness is the one element that can sometimes be left out depending on the type of marinade you are making.
The last part is the aromatics and seasonings, and this is where the marinade really gets its personality. Fresh herbs, dried spices, garlic, onion, and other flavor boosters are what give each marinade its distinct taste.

FRESH GARLIC – Garlic adds bold, savory flavor and helps give the chicken a lot of depth. It is one of the ingredients that really makes the marinade taste rich and flavorful.

Instructions for Italian Chicken Marinade
Start by adding all of the marinade ingredients, except the chicken, to a gallon-size freezer bag. Seal the bag partway and gently mix everything together until the marinade is well combined.
Next, add the chicken to the bag. Press out as much air as possible, then seal the bag completely. Gently knead the bag with your hands so the chicken is evenly coated in the marinade.
If you are meal prepping, place the bag in the freezer until you are ready to use it. About 24 hours before you plan to grill the chicken, take the bag out of the freezer and place it on a dish in the refrigerator to thaw. As the chicken thaws, it will marinate at the same time. Once it is thawed, discard the marinade and grill the chicken until it is fully cooked.
If you are making it right away, place the bag in the refrigerator and let the chicken marinate for at least 2 hours or up to 24 hours. The longer it marinates, the more flavorful it will be. When you are ready to cook, discard the marinade and grill the chicken until it is fully cooked. This recipe serves 4.

- ¼ cup olive oil
- 1 Tbsp lemon juice
- 1 Tbsp apple cider vinegar
- 1 Tbsp water
- 1 tsp Italian seasoning
- 1 clove garlic minced
- 2 tsp dried parsley

- 4 boneless skinless chicken breasts
Instructions
- In a gallon-sized freezer bag, add all of the ingredients except the chicken. Whisk everything together.
- Add in the chicken, remove as much air as possible, and seal the bag. Knead the chicken in the bag to coat it in the marinade.
- If meal prepping, place in the freezer until ready to use. Take out 24 hours before grilling. Place on a dish in the fridge to thaw. Once thawed, disgard mainade and grill until chicken is fully cooked.
- If using right after making, place in the fridge to marinate for a minimum of 2 hours or up to 24 hours. The longer the better for flavor. Disgard marinade and grill the chicken until fully cooked. Serves 4.
