You will love how hearty this ground beef queso chili is. It’s like a regular chili with pasta and homemade queso sauce mixed in to it.
This may look like a long list of ingredients, but don’t let it scare you off. Most of it is canned items that you just add and mix. Other items in there are spices.
This chili is full of flavor, beef, beans, and pasta surounded in a rich tomato cheesey sauce. My whole family loved this.
Ground Beef Queso Chli
Ingredients
- 1 lb ground beef
- 1 onion, finely diced
- 1 tsp salt
- pepper to taste
- 2 (14.75 oz each) cans beef broth
- 2 (15 oz each) cans pinto beans, drained and rinsed
- 1 (15 oz) can petite diced tomatoes
- 1 (10 oz) can condensed tomato soup
- 4 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 2 cups dry rotini pasta noodles
- Queso
- 2 Tbsp butter
- 2 Tbsp flour
- 1 tsp salt
- 2 cups whole milk
- 2 cups shredded cheddar cheese
- Toppings
- Fritos corn chips
- sour cream
- more shredded cheese
- chopped green onion
- chopped fresh cilantro
Instructions

Add in the beef broth, pinto beans, diced tomatoes, tomato soup, chili powder, cumin, garlic powder, and oregano. Reduce to a simmer and cook for 5-8 minutes to thicken.

Once thickened add the shredded cheese and stir until its combined. Add the queso to the chili once the pasta is fully cooked. Cook together for about 5-10 minutes. The chili will thicken more as it sits off the heat.
